Preparing tomato soup Tomato soup is primarily associated with Spanish cuisine, because all known gazpacho is from exactly this hot Mediterranean country. Gazpacho is a soup made of grated tomatoes, which is usually served cold. However, tomatoes are added not only in gazpacho. So, Georgian hurcho is also made with tomatoes, and a tomato note is present in our native borsch. This recipe for tomato soup differs from the standard ideas about gazpacho, and it absorbed many features of different cuisines. So, it, like borsch, is made on broth, although it is based on tomatoes. From the Georgian cuisine here, too, there was a trace - an important part of the dish - abundant and spicy spices. Ingredients:- Broth chicken 2 l
- Tomatoes 2 pcs.
- Celery root 10 g
- Fresh ginger 5 g
- Onions 1 pc.
- Garlic 3 denticles
- Tomato juice 100 ml
- Basil dry 0.5 tsp.
- Pepper red ground 2 g
- Black pepper powder 2 g
- Mustard 2 tsp.
- Pepper spicy 0.1 pc.
- Sugar 1 tbsp. l.
- Salt 1 tsp.
- Basil fresh violet 10 g
- Step 1 To prepare the tomato soup, we need: lightly seasoned and salted chicken broth, onions, 2 large or 3 medium tomatoes, tomato juice, garlic, a small piece of hot pepper (chili or spicy green), a couple of centimeters of ginger root, a small piece of root celery and spices.
- Step 2 Cut the onions into small cubes, garlic and pepper - as finely as possible, we clean the roots of ginger and celery and cut them with straw.
- Step 3 All the sliced roots are put into a saucepan, in which the soup will be boiled, add mustard and mix. Add to the mixture 0.5 cups of broth and put on a strong fire. When the soup boils, the fire is reduced to medium and cook for 5-8 minutes.
- Step 4 In the meantime, we will dip the tomatoes with boiling water, gently remove the skin from them and cut them into small cubes. It is also necessary to cut fresh basil.
- Step 5 In the broth with roots, add 0.5 cups of tomato juice, tomatoes, sugar, salt, spices. Stirring.
- Step 6 Squeeze with mashed potatoes for the largest cubes of tomatoes, and also prevent the tomato mixture and bring it to a boil.
- Step 7 Fill soup with the remaining broth, stir, bring to a boil and cook over medium heat for 15-20 minutes. 5 minutes before the readiness, add fresh basil. At this time, you can check the soup for spices and salt to add the missing.
