Under what conditions is mold formed?

How dangerous are the molds
Each mold is capable of producing mitotoxins (poisonous substances). The spoiled food contains a huge amount of such toxins, but in cheese with blue-green mold (for their maturation use noble mold cultures) they almost never happen. In order for this noble mold to develop toxins, special conditions are necessary.

To avoid possible health hazards, products covered with mold must be destroyed. They can not be fed either by domestic animals, birds or wild animals. Especially dangerous are moldy rye bread, peanuts, almonds, pistachio and American (Brazilian) nuts. Mold fungi, growing in them, are capable of producing very toxic aflatoxins - toxic and carcinogenic (cancer-causing) substances.

Milk and nuts

In recent years, there have been alarming reports about such a vital food product for children, like milk. It turns out that aflatoxins were found in milk and dairy products. True, very soon it became clear where these substances came from in milk. The fact is that the components of mixed fodders for cows were compressed by-products of the oil industry (coconut cake, palm kernels), which quickly molded in the hot tropical regions (where this food is produced), which led to the appearance of poison. In addition, it turned out that aflatoxins are highly resistant to temperature changes, therefore they do not collapse and retain their properties during the whole process of making mixed fodders.

Ergot

In years of high humidity, this fungal infection is especially often affected by rye. Previously, there were mass poisonings of people with ergot. Even today, when buying grain, people engaged in the cultivation of cereals, should look whether the grain of rye is deformed, does not exceed their length normal. Ergot is also dangerous, as before. By the way, the medieval Vitta dance (chorea) was nothing but an ergot poisoning.

Allergy to fungi.

The fungi, which appeared as a result of high humidity, covering the walls of houses, also have an undesirable effect. They are not poisonous, but can cause allergic reactions. Moldy mushrooms are often the cause of a runny nose, coughing or bronchial asthma.

In the help to health

First, antibiotics, as substances fighting bacteria, were obtained from various kinds of mold fungi. During the Second World War, penicillin, obtained from marsupials, saved the lives of hundreds of thousands of wounded. Thus, mold fungi have more positive properties. In addition, if a little mold appears on marmalade or other food products, for the preservation of which a lot of sugar was used, it is enough to remove this mold and the products can be eaten. Today the world produces a lot of cheeses, a special kind and taste of which is determined by noble mold.

Aflatoxins in milk and nuts

Traces of the presence of aflatoxins can be found in milk and in cheeses. Experts carefully check the imported peanuts, as it can find aflatoxin, which can dangerously damage the liver.

Danger of allergies.

Especially dangerous action of mold fungi - severe allergic reactions - from the common cold to bronchial asthma.

Attention

Some food products covered with mold (bread, milk and its products, nuts) are especially harmful to health, so they should be discarded immediately. So take care of your health and do not let mushrooms spread on your products, and harm the whole body.
