A simple homemade roll with jam

  1. Carefully separate the proteins from the yolks. Take care not to get a drop of yolk liquid into the protein, otherwise you will not be able to whip the squirrels as you need

  2. Proteins cool, then whisk in a mixer at high speed until a bulk foam forms. Add vanilla extract and powdered sugar, whisk again until firm peaks. Do not replace the extract with vanillin or vanilla sugar - if there is no extract, just skip this step. Enter into the beaten proteins one yolk, not stopping to mix the mass at an average speed

  3. In the egg mixture, add flour, baking powder and starch (if there is no corn, you can replace it with potato), whilst continuing to beat. Starch is needed to give a more airy texture to biscuit

  4. Mix the water in a separate container with the syrup and add to the dough. You can use melted honey or strained coffee instead of syrup

  5. Pour the dough into a low rectangular baking sheet, level with a spatula so that the layer is no more than a centimeter and bake 10 to 12 minutes in an oven heated to 180 degrees. When the dough starts to spring when pressed, the biscuit is ready. Take out the hot biscuit on the towel, free from parchment and trim the edges with a knife

  6. Gently roll the hot workpiece into a roll using a towel, cover the edges with a towel - so that the dough does not dry. Let the twisted blank completely cool

  7. Unroll the roll, spread it with jam, jam or confiture, stepping back from the edges in centimeters, then - fold in the starting position. Sprinkle roll with powdered sugar and decorate with chocolate topping
