1. Preheat the oven to 175 degrees. Spread the baking sheet with parchment paper or a silicone rug, set aside. Put the cooled dough on a lightly floured surface. 2. Carefully straighten each cookie with your fingers and grease each surface with a small amount of butter, about 1/2 teaspoon. Pour a teaspoon of brown sugar onto each cookie, then sprinkle about half a teaspoon of ground cinnamon (and cocoa powder, if used). 3. Collapse the cookies in a roll and tie the edges, then cut each in half. 4. Lay the rolls upside down on the baking sheet. Bake for 15-18 minutes.
