Shchi from cabbage Shchi - the oldest first dish of Russian cuisine. The main component of cabbage soup is leafy vegetables. They are prepared from fresh and sauerkraut cabbage, Savoy cabbage, cabbage seedlings, young nettles, spinach, sorrel. Liquid basis of cabbage soup is broths (meat, fish, mushroom), and for cooking lean and vegetarian cabbage soup they use cereal and vegetable broth. As additional products, potatoes, onions, carrots, parsley root are consumed. If the cabbage intended for the cabbage soup is bitter, it is preliminarily lowered for 2-3 minutes in a pot of hot water and thrown back to the colander. Serve cabbage soup with sour cream and black bread. The porcelain soup is whitened with poppy milk. To do this, poppy seeds are poured with a small amount of hot water, allowed to swell, pound, dilute with warm water, mix and squeeze.
Ingredients:- White cabbage 500 g
- Pork ribs 500g
- Carrot 1 pc.
- Potatoes 3 pcs.
- Onions 1 pc.
- Processed cheese 100 g
- Sunflower refined sunflower oil 3 tbsp. l.
- Onion green 10 g
- Fresh dill 1 bunch
- Water 3 l
- Vegetable seasoning 2 pinch
- Step 1 To prepare a cabbage, take 3 liters of water, fresh cabbage, pork ribs, potatoes, carrots, onions, greens, soft cream cheese, vegetable oil and a universal seasoning.
- Step 2 Ribs thoroughly wash in running water, pour cold water, bring to a boil, remove the foam, reduce heat and boil them for an hour.
- Step 3 Finely chop the cabbage.
- Step 4 Peel the potatoes and cut them into slices.
- Step 5 In the broth put the cabbage and potatoes and cook them for 15 minutes.
- Step 6 Peel the onion and finely chop it.
- Step 7 Carrots clean and rub on a coarse grater.
- Step 8 Heat the oil in a frying pan, lightly sprinkle onions on it, then add the carrots and put them all together until the carrot is soft.
- Step 9 Put the carrots and onions in a saucepan and cook for 5 minutes.
- Step 10 Cut the green onion into thin rings.
- Step 11 Serve with green onions, seasoning and sprinkle for 3 minutes.
- Step 12 Remove the pan from the stove, and season with a soft melted cheese. When serving, sprinkle with chopped dill and, if desired, put sour cream.
