We cook Shchi Shchi - a liquid dish, which exists in Russia for more than a thousand years. Over the centuries, it has been preserved for all segments of the population: from the poor to the rich. No wonder the shchi were divided into "empty" more lean, sometimes from one cabbage and onions and "rich" more full with meat, mushrooms, etc. An important role in the preparation of this dish was played by the fact that it languished in a Russian oven and from this it acquired its unique, special taste. Cabbage is fresh or sour - the main ingredient of any cabbage soup. Today we have cabbage soup, that is, from sauerkraut.
Ingredients:- Turkey 700 g
- Black pepper powder 2 g
- Salt 5 g
- Bay leaf 2 pcs.
- Sunflower refined sunflower oil 20 ml
- Onions 1 pc.
- Celery root 100 g
- Carrot 1 pc.
- Potatoes 3 pcs.
- Cabbage white sour 300 g
- Water 2 l
- Step 1 To prepare cabbage soup from cabbage soup you will need: turkey meat, sauerkraut, potatoes, carrots, celery root, onion, bay leaves, salt and black pepper.
- Step 2 First you need to boil the broth. It can be made from any meat: beef, pork, chicken. I have a turkey. Fill meat with water and cook. When it boils, remove the foam and cook until the meat is ready on low heat, so that the broth is transparent.
- Step 3 Then broth the broth.
- Step 4 Cut the potatoes into cubes.
- Step 5 Put in the boiling broth.
- Step 6 While the potatoes are brewed, three on grated carrots.
- Step 7 Cut the root of the celery.
- Step 8 Cut small onions.
- Step 9 Then we let the carrots, celery and onion on sunflower refined oil. Send the vegetables to the pan.
- Step 10 Cut the cabbage into the broth and cook for 25-30 minutes until soft. It still depends on your taste: like crispy cabbage - cook less.
- Step 11 When the potatoes, carrots, onions and celery are almost ready, combine them with sauerkraut. We put the bay leaf, salt and pepper to taste and cook for another 10-15 minutes. If the cabbage is very acidic, you can add a little sugar to the soup. Put a piece of meat, greens and sour cream in a plate.
