Lemon Bilberry Pancakes

1. Preheat a large frying pan over medium heat. In a small bowl, mix the flour, salt, baking powder and sugar. Set aside. 2. In a separate bowl, mix the condensed milk, 1 lemon juice (or more if the lemon is not very juicy) and lemon zest. Allow the mixture to stand for 5 minutes, then add the egg, salt and melted butter. Stir the mass thoroughly. 3. Pour the wet mixture into the dry ingredients. Mix gently to a uniform consistency. Add more condensed milk if the mixture is too thick. 4. Add the blueberries and mix. Once again, make sure that the mixture is not too thick. 5. Melt the butter in a hot frying pan. Add in the dough 1/4 cup of butter and fry the fritters on both sides until golden brown. Repeat with the remaining test. Serve fritters with warm maple syrup and butter.
