1. Finely grate the Cheddar cheese and Parmesan cheese. Finely chop the onions. Mix all ingredients except pecans, in a large bowl. Beat with an electric mixer at medium speed until a uniform consistency is obtained. 2. Lay the resulting mixture on a polyethylene film. 3. Cover with a film and form a ball or rectangle. Put the cheese bowl on a plate and put in the fridge to harden, about 30 minutes to 1 hour. 4. Remove the cheese ball from the refrigerator, remove it with a plastic wrap and sprinkle the pecan nuts over the whole surface. 5. Serve cheese with your favorite crackers.
