Before starting the preparation, fondue must be finely grated cheese. Preheat the oven to 200 degrees. Cut 2 large heads of garlic in half. Lubricate the cut with olive oil and fasten the two halves back together. Screw in aluminum foil and bake softness, from 40 to 50 minutes depending on the size. Garlic should be dark beige. Allow to cool completely. Squeeze the garlic in a bowl, discard the skin. Stir with a fork until smooth. In a medium saucepan bring wine and vinegar to a boil over medium heat. Put both cheese and cornstarch in a bowl. Slowly add the cheese mixture to the pan with the wine until the cheese completely melts. Add the fried garlic, season with pepper. Pour into the dishes for fondue, serve immediately.
