In a bowl, mix the softened butter, lemon zest and leaves of rosemary. Slightly salt, pepper and mix. We thoroughly wash the chicken, wipe it with paper towels, lay it on foil. Evenly distribute the creamy mass over the chicken, thoroughly cover it outside and inside. Sprinkle the chicken with the juice of one lemon. The remaining lemons are cut in half and put inside the chicken along with several branches of rosemary (optional). Bake approximately 75-80 minutes at 190 degrees - until cooked.
