Classic cupcakes Often, only the best ingredients are used in cupcakes (I recall from Cupcake English - a cupcake the size of a cup), so they taste as good as they look. And indeed, the culinary glory of the capcake began precisely because of the appearance of small cakes. Despite the fact that the capcake is baked in molds for muffins, it does not look like the last ones. For classic capkake, the dough is kneaded by the method of whipping butter: we start by mixing the butter with sugar, gradually adding all the other ingredients. So the texture of the capcake is more gentle than that of the muffin. I will also remind you of the main difference between the capkeys - the cream cap. Classic, it's oil or protein-oil creams. Colour? Your favorite! It will even be better if the "caps" are of different colors. Remember, the brighter you decorate the capkake, the less they will "live". Ingredients:- Wheat Flour 200 g
- Butter 100 g
- Sugar 150g

- Step 1 For the capkake you will need: sugar, butter (soft), eggs, flour, milk, salt, baking powder, vanillin.
- Step 2 Whisk the butter and sugar until smooth.
- Step 3 Add the eggs, vanilla extract and salt, continue to whisk.
- Step 4 Sift the flour with the baking powder. Stir well.
- Step 5 Then add the milk and mix everything to a homogeneous consistency.
- Step 6 Distribute the dough to the molds.
- Step 7 Bake in preheated to 175 oven for 25-30 minutes.
- Step 8 Prepare a protein-oil cream. You will need: 5 proteins, sugar, butter, 1 tbsp. spoon of lemon juice.
- Step 9 Mix the proteins with sugar and put them on a water bath.
- Step 10 Whisk until sugar dissolves (about 2-3 minutes).
- Step 11 Transfer the resulting mixture into a separate bowl, add lemon juice and whisk until firm peaks.
- Step 12 Do not stop whipping, start adding soft butter and food coloring.
- Step 13 Finish the cream in a refrigerator for 60 minutes, during which time the oil will solidify and the cream will seize.
- Step 14 Decorate the capkake with a protein-oil cream and an edible decor (I have flowers from sugar glaze this time).
