1. Preheat the oven to 190 degrees. Sprinkle the muffin shape with 10 oil compartments in a spray or lined with paper liners. In a small saucepan heat the coconut oil until it melts and heats up. 2. In a medium bowl, mix flour, baking powder, cups of grated coconut chips and salt. In a separate bowl, beat the egg, sugar, coconut oil, Greek yogurt and vanilla extract. Add the coconut mixture to the flour mixture and mix until a homogeneous consistency is obtained. 3. Divide the dough evenly between the compartments of the prepared form. Sprinkle each muffin on top with about 1 teaspoon of the remaining coconut chips. 4. Bake the muffins until the toothpick inserted in the center, will not leave clean, about 20 minutes. Allow the muffins to cool in the form for 5 minutes, then remove them from the mold and serve warm.
