Cooking method

- Beat eggs and yolks with 110 grams of sugar to form a homogeneous mixture - it should drain "tape" along the whisk of the mixer
- In the egg mass, add the dry ingredients in batches, gently and gently stirring with the spatula
- Just carefully insert proteins. The mass should become thick and lush
- Pour the dough on a baking sheet covered with parchment, and straighten to a thickness of five millimeters
- Bake a biscuit in the oven, heated to 180 degrees, about 10 to 12 minutes. Ready to take out the dough, immediately close the food film "in contact" and leave to cool
- For mousse: whip butter, powder and curd cheese in a creamy mass. Cheese should be chilled, and butter, on the contrary - melted. Remove the film from the biscuit and spread the mousse evenly over the dough
