Vareniki with sand, from thyroid glands of bats and so on ... Are surprised ?! I understand you! And now in order! Dumplings with "sand" - the so-called vareniki, which were cooked in Poltava and in the south of the Chernigov region, and the filling for them was prepared from roasted bacon, that is squash. When the fat turned into cracklings, then flour was gradually added to the smalley and mixed until homogeneous. Then this mass cooled down and was used for the filling. Vareniki stuffed with thyroid glands of bats is a recipe from the collection of Leonid Makarovich Kravchuk, whose hobby is collecting recipes for vareniki. He also has recipes for vareniki stuffed with heat-bird tongue, crab and acne muscles, dried bananas, tea leaves and feijoa. But the recipe for vareniki, which I will present, contains a less exotic, but very tasty stuffing - cherries. By the way, when Bill Clinton, being the president of the states, came to Ukraine - he liked vareniki with cherries so much that they were declared one of the president's favorite dishes with the status "Must be served", that is, they should be served!
Ingredients:- Cherry fresh 500 g
- Wheat Flour 1 kg
- Yeast, fresh, 30 g
- Sugar 2 tbsp.
- Eggs chicken 1 pc.
- Kefir 1 tbsp.
- Salt extra 1 pinch
- Step 1 The main ingredients: flour, kefir, yeast, eggs, sugar, salt, cherries.
- Step 2 Preheat kefir to room temperature.
- Step 3 In kefir, add the egg.
- Step 4 Add the yeast and grind it well so that there are no lumps.
- Step 5 Add 1 cup of sugar and a pinch of salt.
- Step 6 Mix the ingredients thoroughly.
- Step 7 Add flour to the mix.
- Step 8 Mix the dough.
- Step 9 Cover the dough with a napkin and leave it in the heat for 30 minutes to come.
- Step 10 Remove the bones from the cherry.
- Step 11 After the dough is right, mix it tight and roll into "sausage".
- Step 12 Then cut the "sausage" to get circles (1 cup = 1 varenik).
- Step 13 Next, you need to tell the circles up to 5 mm thick.
- Step 14 Then put on each circle 0.5 tsp. sugar and 2-3 cherries.
- Step 15 Fold each circle in half and tightly connect the edges to make vareniki.
- Step 16 Now pour the water into the pan and put the mesh in it for cooking on the steam. After the steam starts to go - lay out on the net vareniki and cover the pan with a lid. Cook for 5 minutes without turning the vareniki. The water in the pan should not come in contact with the dumplings.
- Step 17 Vareniki with cherries ready. Now they can be sprinkled with sugar or poured over with sour cream.
