Shchi with chicken As for the origin of cabbage soup, unlike borsch, there is no disagreement - it is a native Russian dish. Traditionally, soup brewed on beef broth, but you can use either pork or chicken broth, as well as a vegetable broth. A distinctive feature of cabbage soup is the sour taste, which is achieved by the addition of sauerkraut. When cooking the cabbage, the vegetables are not steamed, but the onions and carrots can be heated a little on vegetable oil. Well, for now, there is a young fresh cabbage, I suggest a little retreat from the traditions, and prepare soup from fresh cabbage on chicken broth. Prepared in this way, the dish turns tender, tasty and very useful.
Ingredients:- Chicken fillet 400g
- Carrot 1 pc.
- Onions 1 pc.
- Salt 0.5 tsp.
- Water 2 l
- Potatoes 4 pcs.
- White cabbage 500 g
- Carrot 1 pc.
- Onions 1 pc.
- Tomatoes 3 pcs.
- Pepper red ground 0.25 tsp.
- Pepper black ground 1 pinch
- Pepper black with peas 5 pcs.
- Bay leaf 3 pcs.
- Sugar 1 tsp.
- Salt 1 tsp.
- Sunflower unrefined oil 4 tbsp. l.
- Step 1 To prepare a cabbage soup, you will need chicken fillet (you can substitute any part of the chicken), carrots, onions, potatoes, cabbage, tomatoes, vegetable oil, spices.
- Step 2 Fill the chicken with cold water, bring to a boil, let it simmer for 2 minutes, then drain the water. Fill again with chicken 2 liters of cold water and cook, removing foam, over medium heat. How to boil put 1 peeled carrot and onion, salt. Cook the broth for 40-45 minutes, after which we take out the vegetables and chicken, and broth through the layer of gauze.
- Step 3 Shinkle cabbage, cut onions into thin quarters, potatoes and carrots - straw.
- Step 4 Tomatoes pour boiling water for about 5 minutes, then peel and cut into small cubes.
- Step 5 Heat the vegetable oil in a frying pan and heat the onion for no more than a minute.
- Step 6 Immediately add carrots and sugar, stir. Add the cut tomatoes, stir well and turn off the fire.
- Step 7 In the strained broth we add potatoes, let's boil.
- Step 8 When the potatoes boil, add the cabbage.
- Step 9 After the cabbage, immediately add warmed onions and carrots. Add salt, ground red and black pepper to taste. Cook on medium heat until potatoes are ready.
- Step 10 In the finished soup, add bay leaf and black pepper peas. Close the lid and let it brew for 10-15 minutes. Serve the cabbage soup with chicken, chopped portion. You can also add greens, sour cream, garlic when serving. Bon Appetit!
