Risotto with mushrooms, green beans and zucchini For lovers of vegetarian dishes, people eternally slimming and observing all the Orthodox posts are served by Mediterranean cuisine, in which there are a lot of recipes based on vegetables and cereals. The hot climate of these countries allows local residents to do without meat for a long time, whereas in our harsh climate we are accustomed that the second dish must consist of a cutlet, a pork chop or a chicken with a garnish. But we also have a very hot summer, albeit not very long, and sometimes we want to eat something tasty at the same time, not very heavy, but satisfying. So we turn to the overseas cuisine, which abounds with such dishes. One of them is a green risotto - one of the varieties of a whole host of dishes cooked from rice in a special way. Green risotto can be prepared on meat or chicken broth, and just on the water, the taste of this is almost nothing to lose, because besides the rice in this dish, there are so many other ingredients: mushrooms, green vegetables, roots, cheese.
Ingredients:- Long grain rice 300 g
- Chicken broth 600 ml
- Onions 1 pc.
- Mushrooms of oyster mushrooms 150 g
- Garlic 3 denticles
- Squash 1 pc.
- Martini 100 ml
- Frozen string beans 150 g
- Cheese Parmesan 80 g
- Olive oil 4 tbsp. l.
- Salt 2 pinch
- Step 1 For the risotto we need mushrooms, string beans, onion, garlic, zucchini, 80-100 ml of martini, rice, parmesan and well-warmed chicken broth.
- Step 2 Mushrooms oyster mushrooms are washed and cut. Peel onion and finely chop.
- Step 3 Squash is well washed and cut into cubes, chop the garlic finely.
- Step 4 Parmesan rubbed on a fine grater.
- Step 5 In a large frying pan heat the olive oil, then add mushrooms and onions. Fry everything until the onion becomes transparent.
- Step 6 Then add the zucchini and garlic fry another 2-3 minutes.
- Step 7 Add the rice, mix everything and cook for 2-3 minutes.
- Step 8 Pour into the frying pan martini, cook constantly stirring until the smell of alcohol disappears.
- Step 9 Then we start adding hot broth to 1 serving. Continue stirring rice with vegetables until the broth is absorbed, and only then add the next broth of broth again.
- Step 10 5 minutes before the rice is ready, add the string beans (it can not be defrosted) and salt to taste.
- Step 11 When the rice is ready, remove the risotto from the heat, add the cheese and mix well.
- Step 12 Close the risotto lid and let it brew for 5-7 minutes.
