Soup with porcini mushrooms The white mushroom in the people prefer to call a mushroom, and in the title there is something solid. All dishes with the addition of these mushrooms have an appetizing appearance and unique taste. White mushroom is called so, that during drying and cooking it remains light and does not color the broth in a dark color. Perhaps, this is the only mushroom, which uses not only a hat for the preparation of dishes, but also a leg, since it is a little inferior to the cap in nutrition and taste, especially in fried form.
Ingredients:- White beans white 80 g
- Mushrooms, white 400 g
- Potatoes 3 pcs.
- Onions 1 pc.
- Butter 50 g
- Sunflower refined sunflower oil 3 tbsp. l.
- Sour cream 100 g
- Salt 1 tsp.
- Step 1 To make soup, you need to take white beans, fresh boletus (ceps), potatoes, onions, vegetable and butter, sour cream and salt (or vegetable seasoning with salt).
- Step 2 Beans are washed and soaked in cold water for 5-6 hours (can be overnight).
- Step 3 Prepared beans pour 2.5 liters of water and boil until half cooked.
- Step 4 Clean and separate the legs from the hats. Cut the legs into thin rings, and the hats into slices.
- Step 5 Fry the legs in preheated vegetable oil until browned.
- Step 6 In a pan with beans, put the cut hats and fried legs of the boletus and boil for 5 minutes.
- Step 7 Peel the potatoes and cut them into cubes.
- Step 8 Put the potatoes in a saucepan and cook until soft.
- Step 9 Peel the onion and finely chop it.
- Step 10 Pour the onion into a frying pan with preheated vegetable oil and save.
- Step 11 Put the onion in the soup, salt (or pour the vegetable seasoning with salt to taste), stir and cook for 5 minutes.
- Step 12 Remove the pan from the stove and put a piece of butter in the soup. You can sprinkle with chopped dill. When serving, season the soup with sour cream.
