1. Preheat the oven to 220 degrees. Fix the baking tray with parchment paper or a silicone baking mat. Heat the water, diced butter, salt and chilli powder in a saucepan until the butter melts. Add the flour and vigorously stir until the mixture has lagged from the sides of the pan, gathering in a bowl. Remove from heat and let stand for 2 minutes. 2. Add eggs, one at a time, whisking constantly. The dough will become cloddy, but after a minute (or so) it will be smoothed out. Add most of the grated cheese (leave the rest for sprinkling) and mix well. 3. Put the cooked dough into a pastry bag and put the balls into the baking tray the size of the cherry tomatoes. You can also do this with two spoons. Lightly sprinkle each ball with the remaining grated cheese. 4. Bake for 10 minutes, then reduce the temperature of the oven to 190 degrees and bake another 20-25 minutes until golden brown. Serve gushers warm.
