Cooking kharcho Traditionally soup kharcho is made from beef. Harcho in translation from Georgian - "beef soup". Georgians are cooking kharcho with a special dressing - clapping, which is obtained by drying the plum puree. Since it is difficult to find it, often mashed potatoes from fresh tomatoes or acidic plums of tkemali are often used for cooking. In the Soviet culinary book about tasty and healthy food there was a very special recipe for harsh, I always cook it, this soup is very fond in our family. At that time there was no Internet, and there were no books with recipes on free sale, since then I have kept a thick notebook with the best recipes. Sometimes I get it now! This is the recipe from there. For classic soup hurcho you usually need rice, my recipe uses flour filling and that's what attracts me. Soup kharcho - very fragrant and stocky, it includes onions, spices, garlic, hops-suneli.
Ingredients:- Beef on the bone 1 kg
- Mixture of hops-suneli 1 tsp.
- Tomatoes 300 g
- Walnut 100 g
- Onions 3 pcs.
- Flour, wheat 30 g
- Garlic 4 denticles
- Bay leaf 2 pcs.
- Cilantro fresh 5 sprigs
- Parsley fresh 5 sprigs
- Carrots 0.5 pcs.
- Celery stems 1 pc.
- Salt 2 pinch
- Step 1 To make soup kharcho you need to take beef with seeds, onions, carrots, walnuts, celery, tomatoes, garlic, hops-suneli, bay leaf, coriander and parsley.
- Step 2 In the pan, add the washed meat (I have good beef ribs for the rich broth - to the extent of fatty, with lots of meat), large chunks of sliced celery and carrots, quarter of a bulb.
- Step 3 Pour 1.5-2 liters of water and cook for at least an hour.
- Step 4 While meat is being cooked, we will prepare soup filling. Tomatoes scald, peel and finely chop.
- Step 5 Boil a little. If desired, wipe through a sieve to make a mashed potatoes.
- Step 6 Cut the onions into cubes.
- Step 7 In a mortar (or a suitable container), crush walnuts, garlic, pouring a warm broth. To taste, add black and fragrant pepper, cinnamon, or take a ready mix of hops-suneli.
- Step 8 Remove the meat from the broth, lightly cool and finely chop. Broth the broth, removing the roots.
- Step 9 In the sauté pan, remove the onion from the broth and bring it to a clear surface.
- Step 10 Add the chopped meat, a little broth, put out 10 minutes.
- Step 11 Add the puree from the tomatoes. Stew for another 10-15 minutes.
- Step 12 Dissolve the flour with a warm broth, grind well, so that there are no lumps.
- Step 13 Add to the meat, bring to a boil, put out 5 minutes.
- Step 14 Preheat strained broth, enter into it meat with tomatoes and onions.
- Step 15 Bring to a boil, add pounded garlic and nuts, add bay leaf, allow to boil for a few minutes with slow boiling.
- Step 16 Add the greens of cilantro and parsley, give a little infusion under the lid. The aroma of soup kharcho will quickly gather all the household for the table! Bon Appetit!
