Add the chopped tomatoes (or 2 tablespoons tomato paste), salt, pepper, mix everything. Cook for 15 minutes. Then add fresh herbs (if any), stir the minced meat with vegetables and, then, put it in a deep form over the potatoes. Remove the accumulated liquid from the eggplant and remove the salt with paper towels. And fry them on each side until cooked. Lay out the eggplant with the top layer. Then pour the top layer of Béchamel sauce. Sprinkle all with grated cheese. Place the form in a preheated oven to 180 ° C. Cook for 45-60 minutes.
