A few tips for cooking dumplings with potatoes Vareniki is a dish that is attributed to the national Ukrainian cuisine. Filling with which you can cook vareniki, a lot, but one of the most popular are vareniki with potatoes. In the filling for dumplings with potatoes is traditionally added fried onions, but you can add mushrooms, as well as offal. To make the filling turned out especially tasty, the water from the boiled potatoes must be carefully decanted, and add the butter in the puree. To make the dough for dumplings with potatoes soft and tender, you need to take the best wheat flour of the highest grade. Before preparing a batter for vareniki, flour can be prevented from sifting through a fine sieve. This is done not only to remove from the product lumps and randomly caught rough parts, but also to enrich it with oxygen. So the dough will get even more airy. In the dough for dumplings with potatoes it is necessary to add soda, but not all carry its smell. To avoid it, you can simply replace the soda with a baking powder. Dumplings with potatoes are not recommended for cooking, since potatoes, warmed up after cooling, not only lose their taste qualities, but it becomes difficult for the body to digest. - Step 1 To prepare the filling of 7-8 medium potatoes, clean, wash and cut large.
- Step 2 Boil the potatoes until cooked in salted water for 20-25 minutes.
- Step 3 Peel the onion and cut into cubes.

- Step 5 Drain the water from boiled potatoes, mash it with a crust, add 1/3 of frying, butter, salt and pepper to taste and mix well. Allow the filling to cool.
- Step 6 For the dough you need to combine kefir at room temperature, soda and salt - mix everything thoroughly. Kefir can be replaced with water.
- Step 7 Then add the flour to the pieces to make the dough thicken and spread out to mix.
- Step 8 Flour is about 4-5 cups, the dough should get pretty steep and well behind the hands. If the dough is cut, it should be uniform.
- Step 9 Cut the strip from the dough about 2 cm and cut it into cubes, which are dipped into the flour from the sides of the cut. The resulting cubes are rolled out with a rolling pin and stuffed.
