In the pot, pour 2 tablespoons of olive oil, heat it, throw finely chopped onions, leeks, carrots and celery. Fry until half cooked for 5 minutes, then pour water, add diced tomatoes and potatoes. Solim and cook on medium heat. Bring the soup to a boil, reduce the fire, after 10 minutes, add the beans, pasta, zucchini and beans. We cook until the pasta is ready - everything, vegetable soup is ready. It remains to cook the sauce-pistachio. In the bowl of the blender we put fresh basil, pour 50 ml of olive oil, two cloves of garlic and crush it to homogeneity. Add the pisto to the hot soup, sprinkle a little grated parmesan on top - and, until it's cold, to the table!
