Potato tortilla (Spanish scrambled eggs)

Cut the onion and garlic. Cut slices of smoked ham into thin strips. Cut the potatoes, rinse and dry them on a towel. Pour olive oil into the frying pan, warm it up. When the oil heats up add the potatoes, garlic, salt. Mix. Cook under the lid, stirring occasionally until the potatoes become soft (about 25 minutes) Add onion and ham, mix well and leave to cook open for another 5 minutes. Tip: potatoes, onion and ham put in a strainer to drain excess olive oil. Meanwhile, beat the eggs with salt and pepper whisk. Add the potatoes and mix. Put the frying pan on medium heat, pour 4 tablespoons of olive oil (which was drained from the potatoes). When the oil is warmed up, add the potato-egg mixture, mix. Reduce heat, cover and leave to cook for 3 minutes. Your tortilla is almost ready. It needs to be turned around. Use hand protection gloves, hold the lid firmly and turn the Tortilla pan on the lid. Put the tortilla in a frying pan, bottom up for another 2-3 minutes. Serve with chopped wedges, like a pie, hot or cold, if possible with a green salad and French sauce (vinaigrette).
