Recipes for preparing nutritious and delicious dishes from broccoli and cauliflower

Vegetables stewed with pineapple.

Take 200 g of cauliflower and 200 g of broccoli, about 50 g of canned pineapple, half of one bell pepper, lemon, 1 teaspoon of starch, 1 tablespoon of sunflower oil, a few twigs of fresh cilantro.

Inflorescence of cabbage for one minute throw into the boiling water, then throw it back into the colander. Bulgarian peppers cut into strips, fry a little in boiling sunflower oil. Add to the blender pieces of pineapple, cilantro, lemon zest and chop. From the blender, the milled mixture is put into a skillet with Bulgarian pepper, pour in the starch and stir well. Put out on low heat until thick. Then put cabbage in the resulting sauce and simmer for 5 minutes. Before serving, lay a ready-made, very tasty dish on plates and decorate with strips of sweet pepper.

Casserole in creamy sauce.

To prepare this dietary dish, take 400 g of broccoli and 400 g of cabbage color, 100-150 g of cheese, 0, 5 liters of low-fat cream, 1 tablespoon of flour and 1 tablespoon of butter.

Cut the cabbage into inflorescences, rinse, cook for 10 minutes and pour into a colander. Put the cabbage in a baking dish, oiled. Melt the butter in a frying pan, pour in the flour and fry a little, add the cream and bring to a boil. Put grated cheese in a frying pan, stir all the time until it melts. The resulting sauce salt and pepper, pour it cabbage. Put the dish in a preheated oven to 180 degrees and bake for 20 minutes.

Vegetable gratin.

To prepare this dish, you need to take 600-700 g of colored cabbage, 400 grams of broccoli, two eggs, a slice of ham, 100 grams of hard cheese, 2 tablespoons of sunflower seeds, 200 ml of cream, ½ teaspoon of scruffy nutmeg.

Disassemble cauliflower and broccoli on inflorescences, rinse well with running water. Put the inflorescence in boiling salted water, cook for 5 minutes, then flip them into a colander. Fold the cabbage in a greased form. Ham cut into strips and spread between the inflorescences of cabbage. Whisk eggs separately and add half the grated cheese. Salt and pepper the cabbage to taste, sprinkle with nutmeg, pour a mixture of eggs and sprinkle with seeds and the rest of the cheese. To make a dish, you need to take 300 g of cabbage, 300 g of pasta, 2 onions, 1 tablespoon of tomato paste, 1 tablespoon of flour, salt, pepper.

In salted boiling water, place the inflorescence of cabbage and cook for 2 minutes. Drain the water and cook the pasta in the vegetable broth. In a frying pan in butter, fry the finely chopped onion, add the tomato paste, put out two minutes. Then pour in the flour, add salt, pepper and simmer for 2 more minutes. Pour the pasta into a colander, add the broth to the pan and simmer for another 5 minutes until the sauce thickens. Place the pasta on the dish, put cabbage inflorescences along the edges and pour sauce over it.

Braised broccoli with oriental mushrooms.

To prepare the dish, you need 500-700 grams of broccoli, 2 bulbs, 30 grams of Chinese mushrooms, a small piece of fresh ginger root, 200 g curd cheese tofu, 3 tablespoons grated almonds, 4 tablespoons soy sauce, 1, 5 glasses of vegetable broth, 2 teaspoons of starch, vegetable oil, salt, sugar.

Pre-dried mushrooms pour water to soak, then finely chop them. Onions and ginger thinly cut. Cut broccoli on the inflorescence, rinse. In a frying pan, preferably deep, pour a little vegetable oil, put the vegetables and fry. After 3-4 minutes, add the tofu cheese cut into pieces, mushrooms, soy sauce and a pinch of sugar. After another 1 minute, pour the contents of the frying pan with vegetable broth and simmer for 10 minutes on low heat. Dissolve the starch with cold water, add to the frying pan, stirring all the time. Shredded almonds in another clean pan without oil, add to vegetables and simmer for another minute. As a side dish, boiled friable rice will do.
