Cooking lean Shchi

This is a rather old recipe, which requires a particularly careful approach and a lot of time. The cooking takes about 4 hours, but the result is worth it.

Preparation is quite simple, especially if we follow our instructions.

  1. First, you will understand with cabbage, you will be enough 700 g. It can be cut too large, so make it smaller, put it in a goose, fill it with vegetable oil. Add half a glass of water, close the lid and put in the oven for two and a half hours. The temperature in the oven should not be above 130 degrees.

  2. Now proceed to dried white mushrooms, you need them at least 50 g. Pour them with boiling water for 30 minutes. After this, cook on low heat for about an hour. Cook boiled mushrooms and cut into slices. Do not pour out the broth, but strain it.
  3. Slice the onions and carrots finely. Preheat the frying pan, add the vegetable oil and fry.

  4. Then add the mushrooms and fry again about 15 minutes.
  5. Mushrooms, carrots and onion mix with cabbage and fill it with mushroom broth. Bring to the ready on the stove, cook the soup for another half an hour on a small fire.

That's all, soup are ready, and you can serve them to your loved ones. Best before serving, add a little garlic and sprinkle with finely chopped dill. If you want to make them more nutritious, you can add pearl gruel or potatoes.

Lenten soup with beans

Despite the fact that this borsch is brewed on vegetable broth, it is very hearty and tasty. For its preparation, take:

  1. In the morning, put the beans to boil in the same water in which it was infused all night. Cook it for at least an hour until it becomes soft inside.

  2. Take the beans and cook in the same broth two potatoes, cut into bars
  3. Slice the onions and carrots finely and fry in vegetable oil in a frying pan. Then add the tomato paste and pat it a little.

  4. In the second pan, squash a little more carrots along with the beets, previously cut into thin strips. Also cut the prunes and add to the frying pan. Put it out a little.

  5. Add both fries to the broth in which the potatoes are brewed.
  6. Cut 200 g of fresh champignons and fry them with onions. Add to the soup.
  7. Also put the cooked beans in a saucepan, season with spices and cook a little over low heat, for at least 10 minutes.
  8. Before serving, decorate with finely chopped greens.
