Prepare a salad with chicken and arugula Chicken meat and arugula perfectly complement each other in a diet salad with the inclusion of fresh vegetables. In summer, this salad is perfect for dinner, completely sated and without creating a sense of gravity. This juicy salad should not be spoiled with mayonnaise, which works well for us in winter, when the body needs fatty foods, and in the summer heat it is better to use olive oil mixed with lemon juice. If you add Dijon mustard to this traditional sauce "vinaigrette", the taste of the salad becomes more spicy.
Ingredients:- Rucola 70 g
- Chicken thigh 200 g
- Pepper sweet 1 pc.
- Cherry tomatoes 6 pcs.
- Olive oil 3 tbsp. l.
- Mustard Dijon 1 tsp.
- Lemon juice 1 tsp.
- Pepper black ground 1 pinch
- Salt 1 pinch
- Step 1 For the salad, cook: pre-cooked chicken, rukola, sweet pepper, cherry tomatoes, olive oil, lemon juice, Dijon mustard, salt and pepper.
- Step 2 We take the pre-cooked and well-chilled piece of chicken.
- Step 3 From the pepper, remove the seed box, cut the pepper into thin strips.
- Step 4 Cherry tomatoes cut into quarters (you can replace the usual tomato).
- Step 5 The washed and dried arugula is loosely laid out on plates.
- Step 6 Sprinkle the rukkola with pepper strips, gently rubbing our fingers, stirring.
- Step 7 Add the fibers of chicken meat, lift the layers with a fork to mix the ingredients, but do not start the juice ahead of time.
- Step 8 Whisk olive oil with mustard and lemon juice, season with salt and pepper.
- Step 9 Surround the salad with wedges of cherry tomatoes, pour the sauce and immediately served to the table.
