Indian pies Patties - this is perhaps one of the most ancient dishes. In the 5th century BC. about pies was mentioned in the ancient Vedic scriptures. In our time in Europe for the first time pies appeared on the territory of England. It was customary for wives to prepare husbands for work large pies (20-30 cm). For this, the women rolled out the dough, dinners wrapped in it, and that the pies were not confused with the dough, they put the name out and baked it. Over time, new recipes for pies were invented, fillings, spices and condiments were combined. Each country changed and rewrote the composition according to its taste and products. But no matter how the composition of the test changed, the form of serving and the filling - pies will always be a symbol of hospitality. Today we will talk about vegetarian pies called "samosa". This is one of the most popular dishes in India. As a rule, samos are mixed from flour, vegetable or butter and water, fry deep fried nuts, and traditional fillings are vegetables and fruits. Samos can be both snack and dessert, and an incredible number of variations of the fillings will never make this dish monotonous. I propose to prepare samosy with oranges and make them milky frosting. To you they will be remembered by the most delicious tea-drinking and aroma of crisp baking, and it, as is known, good helpers for preservation of a cosiness, heat and love in the house!
Ingredients:- Flour, wheat 400 g
- Butter 125 g
- Water boiled 125 ml
- Oil melted 250 g
- Salt 4 pinch
- Orange 1 pc.
- Curd 400g
- Sugar 80 g
- Turmeric 3 g
- Sugar powder 250 g
- Milk 50 ml
- Step 1 To prepare the samos we will need: melted butter, sugar, flour, cottage cheese, water, salt and a small orange.
- Step 2 Melt butter and mix with water.
- Step 3 Add a pinch of salt and flour.
- Step 4 Knead the tight dough. And leave for 10 minutes.
- Step 5 In the meantime, make the filling. Remove the peel from the orange peel on a fine grater, peel the white peel from the orange, and cut the pulp of the orange into small pieces.
- Step 6 If you want a pronounced and rich taste of zest, then add all the peeled peel to the filling, if you want a light aroma, then it will be enough to peel a half of the orange.
- Step 7 Next, mix cottage cheese, zest, orange pulp and sugar. Leave the filling and go to the test.
- Step 8 The dough is divided into approximately 10-12 equal parts and rolled balls.
- Step 9 From each ball rolling an oval. It is necessary to roll out from the center to the edges, then the patties will not tear during the frying process. And lay out the filling.
- Step 10 Fold the edges. For reliable bonding, the edges can be lubricated with water and then applied with fingers.
- Step 11 After this, we make a pigtail or lay the edges, as you like.
- Step 12 In a skillet with a thick bottom pour melted butter and heat. In a well-heated oil we lower the samos and fry until golden on both sides.
- Step 13 Samosy can be sprinkled with powdered sugar or make a glaze.
- Step 14 To make the glaze, take the powdered sugar, milk and turmeric (to give the glaze an orange color).
- Step 15 All the ingredients are mixed. The mixture should turn out like a thick sour cream.
- Step 16 Then abundantly water glaze the cooled samos. After 15 minutes, the samos are ready for use.
