- large sweet potatoes pierced with a fork - 4 pieces
- unsalted butter, softened - 1/4 cup
- fatty cream - 2 Art. spoons
- apple sauce, preferably homemade - 1/2 cup
- Grated fresh ginger - 2 teaspoons
- salt - 1 teaspoon
- Freshly ground pepper - - To taste
- apple, peeled and chopped - 2 pieces
- sugar - 3 items. spoons
Preheat the oven to 190 degrees. Arrange the potatoes on a baking sheet Bake until done, 1 hour 10 minutes - 1 hour 20 minutes. Remove from the oven and allow to cool. Cut each potato lengthwise. Peel and shake in a bowl with electric mixer. Add 2 tablespoons of butter and cream, stir at medium speed until smooth. Mix with apple sauce and ginger, season with salt and pepper. Put the potato mixture in a heat-resistant dish. Bake for about 10 minutes. Meanwhile, combine apples with sugar in a bowl. Melt the remaining 2 tablespoons of butter in a large frying pan over medium heat. Add the apple mixture and cook, stirring, until the apples get a caramel shade, about 10 minutes. Ready potato mass to take out of the oven, put apples on top and serve.
