Scarpaccia Scarpaccia cake - this is the name for this cake, which comes from the Tuscan province of Lucca, or rather the city of Viareggio. Traditionally, this pie is made with zucchini, but there is also a sweet version of the pie (but that's another story). This recipe will not leave anyone indifferent, because of its simplicity and result, which simply surpassed all my expectations! After trying once Scarpaccu in Versilia, I just fell in love with this dish, or rather in the way it is used in it zucchini! One of my Tuscan friends shared this recipe with me, after which I decided to share it with my Slavic friends!
Ingredients:- Zucchini 350g
- Eggs chicken 3 pcs.
- Wheat flour 6 tbsp. l.
- Cheese Parmesan 60 g
- Milk 100 ml
- Onion white 1 pc.
- Garlic 1 clove
- Salt 1 pinch
- Olive oil 1 tbsp. l.
- Step 1 To prepare, you need zucchini, flour, grated Parmesan cheese, milk, onions, garlic, eggs, salt and olive oil.
- Step 2 Cut the zucchini into thin circles.
- Step 3 Mix the eggs and flour.
- Step 4 Add milk, diluted to 180 ml with water. Stir until the dough is formed without lumps. The dough should not be too thick, but not liquid.
- Step 5 Cut the onions and garlic finely. Add them to the dough, then add the zucchini. Salt and pepper.
- Step 6 Add the grated cheese, mix well.
- Step 7 Lubricate the form (I have 28 cm) of olive oil and pour the dough. The height should be 1-2 cm.
- Step 8 Bake in a preheated oven to 220 ° C, for 25-30 minutes, until a crust is formed. Lubricate the finished pie with olive oil, and can also sprinkle with large sea salt, to taste.
