According to some scientists, zucchini began to grow about five thousand years ago in Central America. But they came to Europe with the ships of Columbus in the 16th century, then the Europeans learned about the useful properties of courgettes. There is also a legend about the appearance of zucchini. It says that zucchini is a gift of gods to women who meet their husbands. Thousands of years ago, on the shores of the Indian Ocean, a tribe of fishermen lived: fish was the only source of food. Men went on a voyage to the open sea, and women went crazy with excitement for their "diggers" and prayed to the gods for their early return. In the end, tired and hungry women asked the gods to give them fruit, which would remind them of the taste of fish and could be grown on land. They also asked that the fruit be as soft and gentle as the taste of crabs and shellfish, be the color of the sea, with a firm skin, like a turtle shell. So the Indian women received as a gift from the gods zucchini.

It is difficult to say that zucchini have a taste of crabs, but we have not tried all their varieties! And in itself zucchini, especially in combination with seasonings, are very tasty and useful. In Russia zucchini came in the XIX century from those countries that we consider southern - Turkey and Greece, and it is no longer so important, where did they actually come from.

Zucchini unpretentious as in cultivation, and in storage. Some varieties can be stored throughout the winter. There are also greenhouse varieties. Therefore zucchini are available for food all year round. Since zucchini is well absorbed by the body, they can be consumed by pregnant women, children, sick and old people.

Due to the small number of calories (16-24 kcal per 100 g of product), zucchini are considered a dietary product. In addition to fats, proteins and carbohydrates, zucchini contain sugars, various fatty acids; vitamins: A, E, C, H, group B, PP, beta-carotene; minerals: magnesium, phosphorus, iron, calcium sodium.

Zucchini is very tasty, and yet they have unique useful properties. They are recommended for eating people who have undergone gastrointestinal surgery, since they have healing properties. Zucchini stimulates the intestine, heals the mucous membranes of the stomach, helps the body absorb proteins. They help to transfer physical loads to a person, since zucchini contain iron, which improves blood composition and its ability to retain oxygen.

Potassium and magnesium are the minerals necessary for normal functioning of the heart muscle - and this is all contained in zucchini. Zucchini can also help with stasis of bile in the liver, and cholecystitis. It is useful to eat zucchini with food and other poisoning: it is better to include as much of the zucchini as a restorative diet.

When preparing zucchini, it is better not to subject them to strong heat treatment: to extinguish no more than 10-15 minutes, in order to preserve useful substances in them.
