Recipe for home Adyghe cheese

Let's start cooking:

  1. Pour the milk into a saucepan and put it on the fire.

  2. Bring it to a boil and add the yogurt.
  3. Stir the mixture continuously until curd flakes start to appear. Serum should become transparent, and the flakes will fall down.

  4. Now you need to take a colander and pour the resulting mass into it, pre-coating the gauze (you can use a special form for making cheese).

  5. Now form the head of cheese, tie hard gauze and put something heavy on it. To do this, you can use an ordinary three-liter jar of water.

  6. Leave the cheese in this position for 10-12 hours. During this time, all the whey drains.
  7. Now prepare the saline solution. To do this, dissolve a little 3 tbsp. l. salt in 1 liter. water. Immerse the head of cheese in it for 2-5 days.
  8. If you plan to keep the cheese long, water with salt should be pre-boiled.

If you want an even richer taste, leave it for two days in the fridge.

How to store cheese in the refrigerator?

Of course, two days to store cheese, this is not the limit. With the right approach, it will remain fresh for a long time. Important! Stale Adyghe cheese changes color, acquiring a yellow or cream shade, and also changes its odor somewhat. To keep it fresh, place the head in a closed container. Ideally, a container or a vacuum package will do, but they can be replaced by an ordinary bank, the main thing is to close it tightly. Thus, you can extend its shelf life to one month.
