Ten years ago, Tina Kandelaki followed the example of many domestic stars and opened her own Georgian restaurant in Moscow. Not everyone has the chance to combine restaurant business with creative activity, but the institution of Tina is still alive and thriving. The secret of its success lies in a carefully selected menu, which is eighty percent of the original recipes of her mother. The hostess made great efforts to have a cozy home atmosphere in her institution and personally participated in the interior design. Her restaurant is buried in greenery and carpets, rabbits jumping on the lawns, and canaries chirping in the hall, muffling the sounds of traditional Georgian tunes with their singing.

Traditional Georgian lavash rolls from Tina Kandelaki
To prepare rolls, you need to take thin lavash (Armenian) and generously grease it with sour cream. Tear the leaves of the salad and spread on the surface of the pita bread. Put a sweet pepper on the salad from one edge on the salad. Chop dill and basil leaves and sprinkle on top. The next layer is a hard cheese. Lavash carefully folded into a roll, starting from the side where the sweet pepper is laid. Cut into 4 pieces, serve with garlic sauce.
Garlic sauce: 4 slices of garlic thoroughly chopped in a mortar or with garlic cloves, mixed with 150 gr. olive oil, add salt, black ground pepper to taste and mix it in a homogeneous mixture. Place it for two hours in the fridge so that the sauce is infused.
