Potato rolls Alu Patra is a traditional Indian dish. Or rather - potato rolls with spices, sesame and coconut chips, fried until golden brown. Perfectly combined with tomato sauce chutney, as well as with sour cream. Spices can be added any that you prefer, but in my opinion the best combination is ginger, turmeric and curry (in addition, turmeric gives a beautiful yellow color). Perhaps you will be surprised that the filling is combined, at first glance, not combined products - potatoes, coconut shavings and sugar, but in the prepared dish everything turns out very harmoniously and mutually complementary.
Ingredients:- Potatoes 6 pcs.
- Parsley fresh 1 bunch
- Coconut shavings 50g
- Sesame White 2 tbsp. l.
- Salt 1 tsp.
- Sugar 2 tsp.
- Ginger dry 5g
- Curry 5 grams
- Flour, wheat 450 g
- Salt 1 tsp.
- Turmeric 1 tsp.
- Water 100 ml
- Oil melted 50 g
- Step 1 To prepare alu patra, you need flour, salt, sugar, melted butter, potatoes, greens, coconut chips, sesame seeds and spices: ginger and curry.
- Step 2 Sift the flour, add salt, turmeric and mix.
- Step 3 Then add the oil and warm water. Knead the dough, cover with a damp towel and leave for 30 minutes.
- Step 4 In the meantime, prepare the filling. Boil the potatoes, mash. Then add greens, coconut shavings, sesame, salt, sugar, ginger and curry. To stir thoroughly.
- Step 5 Sprinkle the table with flour and roll the dough into a thin layer (3-4 mm) about 50x35 cm in size.
- Step 6 Lay the potatoes and level the entire dough.
- Step 7 Roll a tight roll, starting from the long side. And gently cut into slices 1 cm wide.
- Step 8 It will be approximately 20 pieces. You can align them with a rolling pin and give a round shape.
- Step 9 Preheat the frying pan, lay the rolls and fry over medium heat until golden crust on both sides.
- Step 10 Put on a dish and serve with tomato sauce or sour cream.
