Beetroot is thoroughly washed, we separate the fruits from the tops. Beetroot fruits are boiled for a couple until soft (40-60 minutes, depending on the size of beets). When the beet is soft, we remove it from the pan and cool it. When the beet has cooled, remove the skin from it. We cut the beetroot with straw or thin wedges. The beetroot top is well washed and cut into pieces about 3 cm in size. We throw beet tops into boiling salted water, cook for about 3 minutes. Then throw the tops of the colander in a colander, pour out icy water. Squeeze juice from one mandarin. Mix tangerine juice, honey, vinegar, olive oil, salt and pepper. If desired, we also add a little chopped greens here. The remaining mandarins are cleaned and divided into lobules. Mix in the salad bowl beetroot (squeezed from the liquid), beetroot, mandarin slices and sauce. Done! :)
