Hot beetroot Beetroot cooked according to this recipe has a very special taste, which results from a certain sequence of steps. Unique charm gives him the presence of knels from chicken mince. Of course, we'll have to tinker, deciding to cook it, but I assure you: do not regret it! Knels are meatballs, which the French invented, they are prepared from different stuffings of a sparse consistency, using two spoons.
Ingredients:- Beetroot 200 g
- Salt 20 g
- Potatoes 200 g
- Carrots 100 g
- Celery stems 100g
- Onion 100 g
- Chicken mince 500 g
- Sunflower refined sunflower oil 50 ml
- Tomato sauce 50 g
- Eggs chicken 1 pc.
- Potato starch 1 tbsp. l.
- Green onions 0.5 bunch
- Step 1 To prepare beetroot you need to take beetroot, potatoes, onions, celery stalks, tomato sauce, sunflower oil, chicken forcemeat, starch, egg.
- Step 2 In the chicken mince we add a spoonful of potato starch, egg, salt. Well we mix, if the forcemeat turns out dense, we add some water.
- Step 3 Rinse and clean the vegetables.
- Step 4 Pour 2-2.5 liters of water into the pan, let's lower it completely to the beet, cut into half the norm of carrots, celery, onions cut into large pieces. Bring to a boil, cook over low heat for 30 minutes.
- Step 5 In the meantime, we prepare the dressing: rub the carrots on a large grater, cut the remaining onions and celery.
- Step 6 Warm up the frying pan with butter, add carrots, onions, stalks of celery.
- Step 7 We let the prepared vegetables with the addition of a couple of spoons of broth from the pan.
- Step 8 From the broth take out the vegetables, the beets are allowed to cool, the rest is removed.
- Step 9 Cut the potatoes into cubes.
- Step 10 Put the potatoes in the vegetable broth. Bring to a boil, cook for 10 minutes.
- Step 11 We serve soup with vegetables.
- Step 12 Cool the beetroot rubbed on a coarse grater.
- Step 13 We are allowed in a frying pan with the addition of butter and tomato sauce.
- Step 14 We form the knots by means of two spoons: we collect minced meat in a spoon, the second is pressed, scrolled around the central axis,
- Step 15 Spoon the forcemeat with minced meat and dip it into boiling soup. Having formed knels from all forcemeat, gently stir and cook soup with knelami 10-15 minutes with slow boiling. Knels prepare quickly, while they float to the surface.
- Step 16 In the prepared beetroot-tomato dressing, add crushed garlic, mix.
- Step 17 Add the dressing to the soup, bring to a boil, turn off the plate and let the beetroot stand under the lid for 5-10 minutes.
