1. Rinse the brown rice. Bring 4 cups of water to a boil over high heat. Add rice and salt, reduce the fire to medium and cook, partially covered with a lid, 30 minutes. Strain the rice, throwing it back in a colander, and return it to the pan, turning off the fire. Firmly cover the pan with a lid and allow to stand for 10 minutes. 2. Add milk, sugar, honey and vanilla pod into the pan with rice. (If you are using vanilla extract, add it only before serving the pudding on the table.) Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-slow. Cook until the milk is reduced in volume, and the rice does not become creamy, about 30 minutes. 3. If you are using a vanilla extract, stir it with a pudding at this point. If you plan to serve warm pudding, serve it now. If you are going to serve cold pudding, put it in a serving dish and refrigerate. Garnish with pudding strawberries before serving.
