1. Clear the cherry from the bones. Put the puff pastry in a pie mold. Put in the refrigerator for 30 minutes. Preheat the oven to 220 degrees. Cover the dough with foil, put dried beans on it and bake until light golden, about 30 minutes. Reduce oven temperature to 190 degrees. 2. Prepare the almond powder. Grind the oatmeal in the food processor to get about 1/2 cup of oatmeal. Grind almonds in a food processor or chop finely. Melt butter and chill. Mix shredded almonds, oatmeal, flour, sugar, cinnamon and salt in a bowl of a food processor until uniform. Put the mixture in a bowl and mix with melted butter. Make a cherry filling. In a large bowl, mix the cherries with sugar, starch and salt. Add extra sugar if desired. 3. Put the cherry filling over the finished pie crust. Sprinkle with almond powder and bake in the oven for 1 hour 10 minutes, until the filling begins to bubble. Cool to room temperature before serving.
