Curd cookies are prepared very simply from elementary ingredients. Preparation: Skip cottage cheese through a meat grinder or wipe through a sieve so that there are no lumps. Pour the flour into a bowl. Make a groove in the center of the flour and add the soda by extinguishing it with vinegar. Add the cottage cheese, melted margarine (or butter), yolks and mix. Beat whites with sugar and a few drops of lemon juice into the foam. Add the proteins to the curd mixture and knead the dough. Divide the dough in half. Each half roll in a rectangle 1/2 cm thick. Lubricate the surface of the dough with whipped protein and roll the dough into a roll. Repeat with the second half of the test. Cut the rolls into slices about 1 cm thick and place on a baking sheet lined with parchment paper. Bake in the oven until golden brown.
