1. Preheat the oven to 230 degrees. Mix the flour, baking powder, soda and salt in a large bowl with a knife for dough until all the ingredients are evenly mixed. 2. Add the chopped chilled butter to the flour mixture and continue stirring. The mixture should resemble wet sand. Add chilled buttermilk and mix by hand until a homogeneous consistency is obtained. 3. Put the dough on a lightly floured work surface. Roll the dough into a rectangle 25X30 cm thick about 2 cm. Using a round cookie cutter or shape, cut out the biscuits. Combine the resulting scraps and repeat again. 4. Lay the chopped cookies on a large baking sheet. Lubricate the cookies on top with cream or milk, sprinkle with black pepper. Bake the cookies 12-15 minutes until lightly golden. Remove cookies from the oven, grease with melted butter and serve.
