Fruit cupcake It's not at all necessary to wait for Christmas holidays to bake this wonderful cupcake. There are many events during the year, when I want to please myself and my relatives with something unusual and tasty. A large amount of dried fruits distinguishes this cupcake from others. It is very important that dried fruits absorb the juice and liquor, for this you need at least two hours. So, make the filling on the eve of baking. It is interesting that the cake is baked in a packaged form - it needs to be wrapped in parchment and a silicone mat. And one more important remark - after baking the cues should be wrapped in parchment and leave to ripen for a day, or more. All this must be done in order to enjoy a really delicious flavored cake. Ingredients:- Eggs chicken 2 pcs.
- Dark raisins 50 g
- Raisin 50g light
- Sugar 100 g
- Honey 1 tbsp. l.
- Cherry jam 1 tbsp. l.
- Almond 50 g
- Wheat Flour 100 g
- Orange 1 pc.
- Liqueur "Amaretto" 100 ml
- Nutmeg 1 gr
- Carnation powder 1 g
- Cardamom 1 g
- Salt 1 pinch
- Butter 100 g
- Candied fruit 200 g
- Dried apricots 100 g
- Step 1 To make a cake, you need to take the dried fruit: liqueur (preferably dark brown), candied fruits, eggs, sugar, honey, cherry jam, butter, almonds, flour, salt, nutmeg, cardamom, cloves, orange (juice and zest).
- Step 2 On the eve of baking (at least 2 hours) dried fruits and dried, dried apricots and candied fruits cut into cubes.
- Step 3 With the orange, remove the zest (put aside), squeeze out the juice. Mix the mixture of dried fruits with juice and any liqueur. Leave to brew, so that the juice and liquor soaked the dried fruits.
- Step 4 Rinse the almonds, dry them, lightly frying in a pan. Grind in a coffee grinder.
- Step 5 Mild cream butter with a ground almond.
- Step 6 Add half the flour (50 g) and spices (milled independently smell more expressive - I advise). Continue whisking at medium speed for 5 minutes.
- Step 7 Beat eggs by adding sugar by piece, honey (preferably dark buckwheat), cherry jam.
- Step 8 Combine the egg mixture with flour. Stir, whisk for 5 minutes.
- Step 9 Add the remaining flour. Beat.
- Step 10 Add the dried fruit with juice and liqueur.
- Step 11 The dough is ready.
- Step 12 Prepare the form: make a parchment shape with the curls taken into account. Put the dough in the mold.
- Step 13 Clamp the parchment, in addition wrap the form with a silicone rug. Put the packed cake in a preheated oven to 140 ° C. Bake for 3 hours.
- Step 14 Carefully remove the finished cake from the oven. Screw into parchment and leave to ripen until morning.
- Step 15 The cake will become dense, a homogeneous structure - then it's ready. Serve the cupcake to the tea with thinly sliced slices.
