Fish in an unusual "coat" To prepare this recipe I was inspired by an Italian very prestigious culinary contest: it was there that I first saw the use of coffee in the preparation of fish dishes. Coffee gives a light, quite unobtrusive bitterness and aroma to the fish. We will bake fish in almond breadcrumbs, which gives it a fragrance and creates a crispy crust. Orange marinade will complement the taste of spring note!
Ingredients:- Pike perch fillet 300 g
- Almond petals 50 g
- Freshly ground coffee 0.5 tsp.
- Olive oil 20 ml
- Salt 1 pinch
- Orange 1 pc.
- Step 1 To prepare, you need fillets of any white fish, almonds, black ground coffee, orange, olive oil and salt.
- Step 2 Squeeze the juice from one orange and marinate the fish fillets for 30-60 minutes.
- Step 3 Fry the almonds until golden.
- Step 4 Chop the almonds with a large knife to get large granules.
- Step 5 Grease the baking dish with olive oil and place the fish in it.
- Step 6 Bake at 180 ° C for 20 minutes.
- Step 7 Mix the nuts and coffee and add 1-2 tsp. olive oil.
- Step 8 Put the granola on the pieces of fish and bake for another 5-10 minutes.
- Step 9 Heat the orange juice and allow it to evaporate to make a thick sauce.
- Step 10 Pour the fish over the top and serve with a vegetable or other garnish.
