Heat the grill to medium temperature. Finely chop the onions, chop the peperonchini, onions and tomato. In a small bowl, whisk together the granular mustard and white wine vinegar. Season with salt and ground pepper. Add sweet onions, cucumber, tomato, celery leaves and peperonchini. Mix well. Fry the sausages over medium heat until cooked, from 6 to 8 minutes. Lightly fry the buns for hot dogs. Put into each bun on a sausage, lay out the top of the vegetable mixture and serve with seasoning to taste.
