How to cook rice for sushi

Method one.

  1. Rinse the rice thoroughly in cold water, turn it over a sieve and leave it for an hour.
  2. Put the rice in the pan (preferably deep) and pour the rice with water. Add only that the water should be 20% more than rice (say, 200 grams of rice - about 250 ml of water). To give the rice flavor, you can put the seaweed konba. Remember they need to be removed before the water boils in a saucepan.
  3. Cover the rice in a saucepan with a lid, put on medium heat and bring the rice to a boil. Then continue to cook the rice on low heat for 10-15 minutes.
  4. Remove the rice from the fire and let it brew for 10-15 minutes.
  5. In a cup, we combine spoons (table) of Japanese rice vinegar or white wine vinegar, 7 1/2 teaspoons of sugar and 2 teaspoons of sea salt, mix everything well. This is required in order for sugar and salt to dissolve.
  6. Transfer the rice into a wooden basin for sushi and pour it with the prepared mixture. Remember, before you start making sushi, give time to cool the rice.

Method two.

  1. Rinse the rice thoroughly in cold water, turn it over a sieve and leave it for an hour.
  2. About two minutes, cook rice, then remove the rice from the fire and let it swell for 10 minutes.
  3. Open the lid, put the rice on the fire and cook it for another 10-12 minutes. Mix with 1 tsp. salt and sugar and 2 tablespoons. rice vinegar.
  4. Pour the rice into a special bowl, squirt the meridian.

Way the third.

  1. We bring the water in a saucepan to a boil and pour into it the rice prepared in advance. Cook until rice absorbs all the liquid.
  2. In another small saucepan, we should mix the vinegar, salt, sugar and lemon juice. Bring the mixture to a boil, stir until the sugar completely dissolves. Then, as you have guessed, we pour our liquid on this rice and let it brew until it absorbs everything. We let the rice cool down and then we turn to sushi cooking.

Way four.

  1. Wash the rice.
  2. Spread it in a pan, fill it with water. Within half an hour the rice should swell.
  3. We put the rice on the fire and bring it to a boil.
  4. Reduce heat and cook for another 10 minutes.
  5. Remove from heat, for 20 minutes the rice should still swell.
  6. At this time we are preparing vinegar for sushi: we mix the same ingredients as in the previous recipe.
  7. We lay out our rice on a sheet of parchment, we splash with the vinegar prepared by us. Cool rice to body temperature with the help of a fan !!!

Do not worry if you do not have brown algae, sake or myrin at hand. Of course, this is a traditional component of Japanese cuisine, although we note that you can cook excellent rice without them.

We will need:

1000 g of boiled rice;

5 tbsp. spoons of rice vinegar;

2 tbsp. falsely of sugar;

1 teaspoon of salt

Boil the rice. While the rice is being cooked, we carefully mix until the sugar, salt and vinegar are completely dissolved. We put the rice in a separate bowl and pour it on the vinegar mixture. Next, we use a Japanese wooden spatula. We need it in order to quickly mix the rice, distributing it evenly with the vinegar mixture.

Note that instead of apple cider vinegar, you can also use red plum vinegar. In this case, rice gets a nice festive pink color.

If you add a teaspoon of turmeric in rice, the rice will be bright yellow.

By the way, if you add rice to sushi and mix well two tablespoons of ground algae, the rice will turn gently green.
