Tomato is a wonderful vegetable. It is beautiful in taste and unimaginably useful. But the young housewives do not really imagine what interesting dishes are cooked from tomatoes. Gaspacho with pepper, cucumber and celery.

We need four servings:

- 7 tomatoes.

- 1 cucumber.

- 1 pepper red Bulgarian.

- 2 stalks of celery.

- 1 red onion, 3 cloves of garlic.

- 1 tablespoon of wine vinegar.

- 5 tablespoons olive oil.

- salt, pepper, a pinch of ground chili pepper.

Tomatoes must be scalded and skins removed. Also clean the cucumber and cut it into slices. Peeled onion cut in half and chop one side finely. Then it should be cut into small pieces of celery and cloves of garlic. After that, you have to deal with the pepper: remove the grain from it and cut it into cubes.

In a blender, tomatoes, peppers, onions, cucumber, garlic, celery should be crushed to form a puree. The resulting vegetable puree should be transferred to a bowl. Add olive oil, vinegar, pepper, salt and mix thoroughly. The prepared dish needs to be cooled half an hour in the refrigerator. And only after that, serve on the table. In each serving - 190 kcal.

Saute with paprika and garlic.

We need four servings:

- 6 tomatoes.

- 1 pepper red Bulgarian.

- 1 onion, 3 cloves of garlic.

- 7 tablespoons olive oil.

- 4 tablespoons of sugar.

- 10 tablespoons of apple vinegar.

- salt, black and red pepper.

First you have to remove the seeds from the pepper and cut it into cubes. Then finely chop the peeled garlic and onions. After that, scald the tomatoes, peel them and cut them into large pieces. After preparing the ingredients, you should pour olive oil in a large saucepan and warm it. Put the cut vegetables there and simmer on a small fire for about 10 minutes. After this time, add salt, spices and vinegar. Then cook for another 45 minutes over medium heat. After cooking, put in a jar, allow to cool and put in the refrigerator. After half an hour the dish is ready for eating. In each serving - 180 kcal.

Confiture with lemon.

We need four servings:

- 6 tomatoes.

- 1 lemon.

- 10 tablespoons of ordinary sugar, 20 grams of vanilla sugar.

First you need to peel off the tomato and cut into cubes. Then cut into thin slices of lemon along with the skin and cover with sugar. After that, the products should be placed in a bowl, add vanilla sugar and put on a plate. The intensity of the fire should be medium in strength. The mixture should be brought to a boil, and then simmer over a low heat with the lid closed for about an hour. Do not forget to stir regularly! The finished confiture must be transferred to a clean container and allowed to freeze. In each serving of confiture, 210 kcal will be obtained. The next interesting dish, cooked from tomatoes, will be a hot appetizer.

Hot appetizer with Parmesan, anchovies and basil.

We need four servings:

- 10 tomatoes.

- 5 cherry tomatoes.

- 200 grams of anchovies canned.

- 50 grams of grated Parmesan cheese.

- 16 olives (without pits).

- 20 capers.

- 2 slices of white bread without a peel.

- 3 tablespoons olive oil.

- 3 cloves garlic.

- 1 bunch of basil.

- salt pepper.

The algorithm is as follows. Finely chop the sprigs of basil and peeled garlic. White bread to break into pieces. Rinse and chop the anchovies. Peel the peel from the cherry tomato. Then you should put everything in a bowl with basil and garlic, add capers, olives and olive oil. Salt, pepper and mix. The next step: large tomatoes cut into halves, without removing the peel. Cut the core and lay it on a baking sheet. Stuff tomatoes with the prepared mixture, sprinkle with Parmesan. Put the baking tray in the oven and bake for 15 minutes at a temperature of 200 degrees. In the finished portion - 230 kcal.

Salad with potato dumplings, arugula and shallot.

We need four servings:

- 3 tomatoes.

- a pound of potatoes.

- 100 grams of arugula.

- 60 grams of grated Parmesan cheese.

- 150 grams of fat-free cottage cheese.

- 150 grams of flour.

- 2 eggs.

- 1 onion fennel, 3 sprigs of tarragon, 1 head of shallots, 10 leaves of currant.

- 7 tablespoons olive oil.

- salt pepper.

- 3 tablespoons balsamic vinegar.

This interesting dish is prepared as follows. Cook the potatoes and cook the mashed potatoes. Flour, 3 tablespoons of olive oil, eggs, cottage cheese and parmesan should be mixed with mashed potatoes. Add finely chopped rukola, salt and pepper. From the resulting puree should be formed sausage 2 cm thick and cut into thin slices. The resulting dumplings should be thrown into boiling salted water and boiled for three minutes. Then you should prepare the greens. Fennel cut into rings, tomatoes - cubes, peel and chop on shallots. Stir the vegetables, salt, pepper and season with vinegar. From above add twigs of tarragon and currant leaves. In the end, you have to roast the dumplings and put it on the plate with the salad. The energy value of one serving is 560 kcal.
