1. Preheat the oven to 200 degrees. Pull the pan cake out with parchment paper and sprinkle it with oil. Mix together the flour, baking powder, soda and salt in a large bowl. Set aside. 2. Beat the softened butter and 2/3 cup sugar with a mixer at medium speed, about 2-3 minutes. Add vanilla extract, lemon juice and lemon zest. Add the egg and beat well. 3.
