Cold soup Okroshka is considered to be a summer dish, which is very refreshing in the heat and allows you not to die of hunger, when no high-calorie meals simply go to the throat. But sometimes you want to remember the summer and the dank autumn, and cold winter, so it comes to mind again to cook such a tasty and favorite okroshka. But, if the summer option can do without protein products - eggs, meat, sausages, then in the colder months of the year you still want something more potent. Simply buy a smoked chicken in the supermarket, it will add the satiety to the dish, and fill it with a pleasant aroma and taste. Of course, the most delicious chicken okroshka is obtained in summer cottage in summer, when all the necessary vegetables and greens grow under the window, homemade kvass wanders on the windowsill, and in the refrigerator or woven basket waiting for their turn the freshest village eggs. If the whole thing is refilled with sweet country sour cream, then any restaurant cuisine will die of envy. But even if the winter is outside the window, and you do not have a dacha or "proper connections" in the village, this is not a reason to give up such pleasure as chicken okroshka - get down to business quickly and easily enjoy your favorite, childhood-familiar taste.
Ingredients:- Chicken breast smoked 200 g
- Eggs chicken 3 pcs.
- Potatoes 2 pcs.
- Radish 200g
- Pickled cucumbers 3 pcs.
- Green onions 1 bunch
- Fresh dill 1 bunch
- Sour cream 3 tbsp. l.
- Kvass bread 1 liter
- Salt 2 pinch
- Step 1 To prepare okroshki take smoked chicken breast, eggs and potatoes, 7-10 pcs. radishes, salted or lightly salted cucumbers, a bunch of green onions and dill, kvass and fatty sour cream.
- Step 2 Eggs pre-boiled hard (dip into cold water, bring to a boil and cook for 10 minutes from the time of boiling). Potatoes are also boiled in a uniform until ready for 15-20 minutes. Potatoes, eggs and cucumbers cut into cubes.
- Step 3 Chicken breast cut into strips, and radish rub on a coarse grater.
- Step 4 Dill and green onions are well washed, dried and finely chopped.
- Step 5 Combine the potatoes, eggs, lightly salted cucumbers, chicken breast, radish and greens, add kvass to the desired consistency (about 1-1.5 liters) and sour cream to taste.
- Step 6 Mix the soup well, add salt to taste. Serve with dill.
