Put eggs, greens, salt and pepper in a bowl and mix with a fork. Mix for no more than 30 seconds in order to obtain the desired consistency. Heat the oil in a frying pan. Pour the egg mixture. After 30 seconds, mix again but already in the pan. Sprinkle evenly with grated cheese. When the cheese begins to melt, fold the omelet in half. Fry on each side for 30 seconds until lightly golden. We put the omelet on the plate. Serve with green peas.
