Royal delicacy Onion soup is a dish of French cuisine, and many of you have heard of it. To my taste, onion soup is a hearty aromatic dish. Ernest Hemingway noted that this soup is good for breakfast - it is sobering, gives strength for the whole day. And it is true! After all, onions contain many vitamins and minerals. From time immemorial in France, there was a recipe for cooking onion soup. However, in the XVIII century it became a royal delicacy. There is a legend that the inventor of the modern version of onion soup was Louis XV. After hunting without dinner, he, or himself, prepared soup from onions, butter and champagne, or ordered the cook to do it. At present, onion soup has become a visiting card of French cuisine for tourists along with croissants, cheese and fine wines. In cooking, onion soup is very economical, simple. If desired, you can add in the last stage to the soup a white dry wine or champagne. In front of you is the basic soup recipe.
Ingredients:- Broth of vegetable 1500 ml
- Garlic 3 denticles
- Turmeric 1 g
- Thyme (Thyme) dry 1 g
- Black pepper powder 1 g
- Salt 3 g
- Sugar 1 tsp.
- Bread white 1 pc.
- Cheese Parmesan 150 g
- Butter 50 g
- Wheat flour 1 tbsp. l.
- White onion 2 pcs.
- Olive oil 10 ml
- Step 1 To prepare onion soup, you need to take vegetable broth (can be replaced with meat soup), onion, flour, butter (melted), salt, sugar, pepper, turmeric (optional, I added for brightness of color and taste), thyme, cheese is a hard and French baguette.
- Step 2 Preheat the frying pan, butter melted.
- Step 3 Cut the onions into thin semi-rings (if you take small bulbs, preferably rings) and garlic, place on a heated frying pan. Passer all the time stirring, for 20 minutes.
- Step 4 Add sugar, flour and turmeric. Stir. Passure for another 5 minutes until golden brown. At the end add thyme.
- Step 5 Pour in the vegetable broth. Boil. Salt and pepper. Close the lid. On a slow fire, hold for 30-40 minutes. (Do not use a blender, do not chop the onions! From this, the taste will get worse and this will be another dish!)
- Step 6 Toast the greens with a small amount of olive oil and fry in an oven or on a dry frying pan until red.
- Step 7 Pour soup over serving plates. Top with croutons. Sprinkle a small amount of finely grated cheese. Put in a hot oven at 180 ° C for 10-15 minutes.
- Step 8 Ready the soup to serve hot for lunch or dinner.
