Salad with pasta, green onions and cheese

1. Cook the pasta in a large saucepan in well-salted water according to the instructions on the package. Drain the water and set macaroni aside, reserving 1/2 cup of liquid. 2. Finely chop the green onions. Grind the garlic. Heat the olive oil in a large frying pan. Add most of the green onions, all garlic and a pinch of salt. Cook until the onion is soft, and the garlic will not start to change color, about 4 minutes. Remove from heat and allow to cool for a few minutes. 3. Using a hand blender or food processor, mix the prepared onion mixture with 3/4 teaspoon of salt, 1/4 teaspoon of black pepper, rind of lemon, half a lemon juice and pasta liquid until a consistency of puree. Mix with grated Parmesan cheese. Cut the apple into cubes. Mix the pasta with onion sauce in a large bowl. Mix well. Add arugula and most of the apple. Mix. Add salt, pepper and lemon juice to taste, if necessary. Sprinkle the remaining pieces of apples and green onions and serve immediately.
