1. Preheat the frying pan with non-stick coating on high heat. Mix the dry ingredients together (flour, sugar, baking powder, soda, salt) and set aside. 2. In a separate bowl, beat the egg, Greek yogurt and melted butter together. Add the dry ingredients to the egg mixture and mix. 3. Add grated zucchini and mix until it is evenly distributed throughout the dough. 4. Gradually add water or milk until the dough reaches the desired consistency. The more you add the liquid, the thinner the pancakes will be. 1/2 cup is enough that the pancakes are moderately thin. 5. Pour 1/3 cup of dough into a frying pan and gently level if necessary. Fry the fritters for about 5 minutes on each side. When you see the bubbles around the edges, it's time to turn the fritters. Finished pancakes to serve with butter and maple syrup.
